Sweet Potato and Marshmallow Recipe

Hi everyone,

I know this is a little late, but some people requested that I share the recipe for the food I had on thanksgiving so here it is!

Ingredients:

4 lb sweet potato, quartered
1 cup margarine or butter
34 cup brown sugar
3 cup miniature marshmallows, divided
1 ground cinnamon, to taste
1 ground nutmeg, to taste
    Recipe:
  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 13 x 9 inch baking dish.
  2. Bring a large pot of water to a boil. Add potatoes and cook until slightly underdone, about 15 minutes. Drain, cool, and peel.
  3. In a large saucepan over medium heat, combine margarine or butter, brown sugar, 2 cups marshmallows, cinnamon, and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
  4. Stir potatoes into marshmallow sauce. While stirring, mash about half of the potatoes and break the rest into bite-sized pieces. Transfer to prepared dish.
  5. Bake for 15 minutes. Remove from the oven and cover the top evenly with remaining marshmallows. Return to the oven and bake until marshmallows are golden brown.

Fruits or Vegetables? A debate.

Today I thought I would do something a little different than I have before. Today, we’re going to do a debate between fruits and veggies.  I personally prefer fruits over veggies.  I honestly don’t like any vegetables.  I can’t think of one vegetable I actually enjoy eating.  I’ll eat corn, but it’s not necessarily my favorite food in the world.  On the other hand, I can’t think of a fruit I don’t like! Fruits are so full of flavor and it’s always good.  I don’t think I can pick a favorite fruit because I really like all of them.  You always see other snacks flavored after fruit, such as gum or flavored drinks, but you never see any carrot or green bean flavored foods.  That is why I think fruits are way better than vegetables.  Let me know what you think in the comments!

Thanksgiving Dinner

Over thanksgiving break I went to Denver, Colorado.  We only went to tour and look at the mountains, but my Mom’s stepbrother also happens to live there so we had dinner with his family.  I don’t really like thanksgiving dinner because like I mentioned in a previous post, I’m a pretty picky eater.  This year on my plate, I had turkey, bread, stuffing, sweet potatoes and for dessert I had pumpkin pie. Everything tasted so good especially the stuffing.  I tried this new food that my uncle made and it was pretty much sweet potatoes covered in marshmallows.  It was delicious and I definitely recommend trying.

What My School Lunch Looks Like

I’m a pretty picky eater and I don’t typically eat a lot during the day.  If you’re like me, then hopefully you’ll try some items from my lunch!  During the school day, I usually carry a 32oz. water bottle around with me throughout the whole school day so that’s what I drink during lunch.  Then, I pack some snacks.  Those snacks usually include goldfish, pretzels, applesauce, a clif bar or some other snack/fruit.  After snacks, I have to eat a main meal or some form of protein.  That usually varies.  Some days I have pasta or chicken nuggets in my thermos and some days I just pack a banana with peanut butter just to get some protein.

Dinner In a Pinch

My family likes to have dinner together as often as possible.  However, with me and my younger brother always having sports and activities, it’s hard to find time to sit down and eat together. When we’re in a rush we like to eat taquitos.  We buy taquitos from costco.  You just pop them in your toaster oven and they’re done within 10 minutes. They taste good too!

My Favorite Fast Food Restaurant

I think there are two types of restaurants.  Fast food restaurants and sit down restaurants.  My favorite fast food restaurant is Chick-Fil-a. I like Chick-Fil-a because their chicken is really good and not like any other fast food chicken nuggets.  I think Chick-Fil-a  is a unique restaurant as a whole and unique.  I recommend this restaurant! Image result for chick fil a
